Ingredients

  • 4 salmon fillets (150g each)
  • 2 medium sweet potatoes, cubed
  • 3 cups broccoli florets
  • 2 tbsp olive oil, divided
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Zest and juice of 1 lemon
  • Salt and black pepper to taste
  • Fresh dill to garnish (optional)

Instructions

Preheat the oven to 200°C (400°F). Line a large baking tray with parchment.

Toss sweet potato cubes with 1 tbsp olive oil, smoked paprika, salt, and pepper. Spread on the tray and roast for 15 minutes.

Push sweet potatoes to one side. Add broccoli tossed with remaining oil, minced garlic, and salt to the other side.

Pat salmon dry, season with garlic powder, salt, pepper, and lemon zest. Place on the tray skin-side down.

Roast everything together for 12–14 minutes until the salmon flakes easily and the vegetables are caramelized.

Squeeze lemon juice over the tray, garnish with dill, and serve.
