Ingredients

  • 600g chicken breast (4 fillets)
  • 1 cup dry quinoa, rinsed
  • 2 zucchini, sliced
  • 1 red bell pepper, cut into strips
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil, divided
  • Juice of 1 lemon
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and black pepper to taste
  • Fresh parsley to garnish

Instructions

In a bowl, whisk 1 tbsp olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Coat the chicken breasts and marinate for at least 20 minutes (or up to 4 hours in the fridge).

Cook the quinoa: bring 2 cups of salted water to a boil, add quinoa, reduce heat, cover, and simmer for 15 minutes until the tails unfurl. Fluff with a fork.

Toss the zucchini, bell pepper, and onion with the remaining olive oil, salt, and pepper.

Heat a grill pan over medium-high heat. Grill the chicken 6–7 minutes per side until charred and the internal temperature reaches 74°C (165°F). Rest for 5 minutes, then slice.

In the same pan, grill the vegetables 3–4 minutes per side until tender with char marks.

Divide quinoa among 4 plates, top with sliced chicken and grilled vegetables, and garnish with fresh parsley.
