High-Protein Cottage Cheese Stuffed Chicken Breast
Nutrition per serving
Ingredients
- 4 boneless, skinless chicken breasts (about 800g)
- 250g low-fat cottage cheese
- 100g fresh spinach, wilted and squeezed dry
- 2 garlic cloves, minced
- 40g parmesan, finely grated
- 2 tbsp fresh parsley, chopped (or 1 tbsp dried oregano)
- Zest of 1 lemon
- 1 tbsp olive oil
- 1 tsp smoked paprika
- Salt and black pepper, to taste
- Toothpicks or kitchen twine, to secure
- 2 zucchini, cut into half-moons
- 2 bell peppers, cut into chunks
- 200g cherry tomatoes
Instructions
Preheat the oven to 200°C (400°F). Butterfly each chicken breast and pound lightly to even thickness; season with salt, pepper and paprika.
Stir the cottage cheese with the wilted spinach, garlic, parmesan, parsley and lemon zest; season well.
Spread the filling over the opened chicken, roll or fold closed, and secure with toothpicks or twine.
Sear the stuffed breasts in olive oil over medium-high heat, 3 minutes per side, until deeply golden.
Transfer to the oven with the zucchini, peppers and tomatoes tossed in a little oil; bake 20–22 minutes until the chicken reaches 74°C (165°F) inside.
Rest 5 minutes, remove the toothpicks, slice to show the filling, and serve with the roasted vegetables and pan juices.
This stuffed chicken breast is what happens when comfort food and a serious protein goal stop fighting. You butterfly the breasts, pack them with a herbed cottage cheese and spinach filling, sear them hard for a golden crust, and finish in the oven while the roasted vegetables catch up on the same tray. The cottage cheese melts into something creamy and rich without the heaviness of a cream-based stuffing, and the lemon zest keeps everything bright. Each serving lands 45 grams of protein at just 450 calories, with 15 grams of carbs, 20 grams of fat and 4 grams of fiber, so it fits low-carb and weight-loss plans without tasting like a compromise. It is naturally gluten-free, and the whole thing comes together with about 45 minutes of real kitchen time. Leftovers reheat beautifully for lunch the next day — slice the chicken cold over a salad and thank yourself.
