  • 6 large eggs
  • 4 egg whites
  • 200g canned black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 100g baby spinach
  • 120g 0% Greek yogurt

  • 2 large whole wheat tortillas
  • 1 tsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste

Instructions

1

Heat the olive oil in a large nonstick skillet over medium heat. Add the peppers and cook 3–4 minutes until the edges start to char, then stir in the spinach until just wilted.

2

Add the black beans, cumin and smoked paprika and cook 2 minutes until warmed through and fragrant, then push everything to one side of the pan.

3

Whisk the eggs and egg whites with a pinch of salt and pepper, pour into the empty side of the pan and scramble gently until just set.

4

Stir the eggs through the veggie mixture, take the pan off the heat and spoon the Greek yogurt through so it melts into a creamy sauce.

5

Warm the tortillas directly over a gas flame or in a dry pan for 30 seconds per side, then divide the filling between them.

6

Top with avocado slices and a few drops of hot sauce, fold in the sides and roll up tightly. Serve warm.

I eat this breakfast burrito at least three mornings a week and I never get bored of it. It's built like a bodybuilder's breakfast but eats like a lazy Sunday brunch — fluffy scrambled eggs and egg whites, seasoned black beans, charred peppers and wilted spinach, and a smear of creamy Greek yogurt that quietly replaces sour cream. Each serving packs 30 grams of protein, and at 390 calories it keeps me full straight through to lunch with no mid-morning snacking. Everything cooks in one skillet in about 20 minutes, and the filling reheats so well I always cook extra for tomorrow. Roll it up in a warm whole wheat tortilla with some avocado, and it's proof that weight-loss food doesn't have to be boring.
