Light Turkey Shepherd's Pie with Cauliflower Mash
Nutrition per serving
Ingredients
- 500g lean ground turkey
- 1 large cauliflower head (~800g), cut into florets
- 200g frozen peas and carrots
- 1 large onion, diced
- 2 garlic cloves, minced
- 250ml low-sodium beef or chicken stock
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tbsp olive oil
- 60ml light milk
- 40g reduced-fat cheddar, grated
- 1 tsp dried thyme
- 1/2 tsp smoked paprika
- 1 tbsp cornstarch mixed with 2 tbsp water
- Salt and black pepper, to taste
- Fresh parsley, to serve
Instructions
1. Boil the cauliflower florets for 8–10 minutes until very tender, drain well and mash with the milk, salt, pepper and half the cheddar until creamy.
2. Heat the oven to 200°C. Brown the ground turkey in the olive oil for 5–6 minutes, breaking it up.
3. Add the onion and garlic and cook 4 minutes; stir in the tomato paste and thyme, then add the stock, Worcestershire sauce, peas, carrots and cornstarch slurry, and simmer 8–10 minutes until thickened.
4. Transfer the turkey mixture to a baking dish and spread evenly.
5. Spoon the cauliflower mash over the top, dust with the smoked paprika and remaining cheddar, and bake 18–20 minutes until golden on top.
6. Rest for 5 minutes, scatter over the parsley and serve hot.
This shepherd's pie is my answer to cold evenings when I want comfort food but I'm staying on my weight-loss plan. Lean ground turkey simmers with onion, carrots and peas in a herby stock, then gets topped with creamy cauliflower mash instead of heavy mashed potatoes — saving a pile of calories while keeping the dish deeply satisfying. A layer of reduced-fat cheddar on top goes golden and bubbly in the oven. Each serving packs 34 grams of protein, and at 410 calories it genuinely fills you up. It's 50 minutes in the oven total, and the leftovers — if there are any — reheat beautifully the next day.
