Asian Sesame Chicken Lettuce Wraps

Ingredients
- 500g lean ground chicken
- 1 tbsp sesame oil
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 3 tbsp low-sodium soy sauce
- 1 tbsp honey
- 1 tsp rice vinegar
- 1/2 tsp chili flakes (optional)
- 1 red bell pepper, finely diced
- 2 spring onions, sliced
- 100g carrots, julienned
- 8 large butter lettuce leaves
- 1 tbsp toasted sesame seeds
- 2 tbsp fresh cilantro, chopped
- Lime wedges, to serve
Instructions
Whisk together the soy sauce, honey, rice vinegar and chili flakes in a small bowl to make the glaze.
Heat the sesame oil in a large wok or skillet over high heat. Add the ground chicken and cook 5 to 6 minutes, breaking it apart, until browned.
Add the garlic and ginger and stir-fry 1 minute until fragrant.
Pour in the glaze and toss for 2 minutes until the chicken is glossy and caramelized.
Remove from heat and fold in the diced bell pepper and spring onions.
Spoon the hot chicken mixture into the butter lettuce leaves.
Top with julienned carrots, toasted sesame seeds and fresh cilantro. Serve with lime wedges.
